And the best of all - only 3 MAIN INGREDIENTS! The taste is not your traditional chickn or tofu nuggets it has the natural sweetness from the beetroot, while having a super creamy texture on the inside and crunchy on the outside. I paired it with a spicy sriracha hummus dipping, and heaven~

INGREDIENTS:
1 large beetroot
1 can chickpea
1 cup rolled oats
2 tbsp olive oil
1/2 tbsp garlic powder
1 tsp cumin
TO MAKE:
- Wrap the beetroot in aluminum foil and bake at 400F for 45-50 minutes till cooked thru, test with a fork, should be able to insert fairly easily;
- When the beetroot is cooled down enough to handle, peel and cut into cubes, blend together the beet, oats, chickpeas, olive oil, garlic powder and cumin till very smooth;
- Shape into heart shapes, I used a cookie cutter;
- Bake at 395F for 30 minutes;
- Pair with sriracha hummus or your favorite dipping sauce, enjoy!
