Your sushi rolls called and said they want you to zazz them up! So here are some vegan black rice dragon rolls with sliced mangos and avocados inside out. These are about the most colorful sushi's I ever made and they taste as popping as they look - seriously lil bombs of flavors!
It goes without saying that dragon rolls take a bit more work and time to achieve than maki sushi rolls - the kind that has nori sheet on the outside. But believe me they really do worth the trouble! Not only do they look more impressive and festive, they also has more flavors because in addition to the inside fillings these also have toppings.

INGREDIENTS:
1 cup uncooked short grain rice
1/2 tablespoon sushi vinegar
4 nori sheets
1 mango, thinly sliced
1 avocado, thinly sliced
1 block of extra firm tofu
6-7 stalks of asparagus
1 cucumber
1 carrot
1/2 cup shredded purple cabbage
Bamboo mat for rolling
TO MAKE:
- Cook rice according to package instruction, fluff them up and let cool down, then season with the sushi vinegar;
- Prep the fillings, thinly slice the cucumber and carrot, roast the asparagus, and cut the tofu into 1/4 inch strips and pan fry till golden brown on all sides;
- Cover the bamboo mat with plastic wrap to prevent it from sticking to the rice;
- Spread 1/4 of the cooked rice on the ROUGH side of nori sheet, press down evenly, flip it over;
- Arrange the fillings onto the shiny side of the nori, pick up the bottom edge with the bamboo mat and start rolling as tightly as possible;
- Place a layer of thinly sliced mango or avocado on top of the roll, then cover with another piece of plastic wrap, slice into 8 pieces;
- Serve with tamari or soy sauce and wasabi, enjoy!
